McDougalls Choux Pastry

Choux pastry made with McDougall plain flour.

  • 325g ¬†McDougalls plain flour
  • 625ml Water
  • 250g Butter
  • 10 Eggs


  1. Place water and butter into a pan and put on a low heat
  2. Once the butter has melted, turn up the heat. Take the water to a rolling boil
  3. Remove from the heat, and immediately add the flour
  4. Beat with a wooden spoon until well combined
  5. Smooth the mixture onto a plate to cool and when cooled place in a bowl
  6. Beat the eggs
  7. In small additions, add the beaten egg to the flour and butter mixture
  8. Continue adding the egg, until a smooth dough forms, which comes away from the edges of the bowl
  9. Spoon the mixture into a piping bag, and snip the end
  10. Pipe onto a lined baking tray
  11. Take a little water on the end of your finger and smooth down any peaks
  12. Bake in a hot oven (200- 220c) for approx 20-25 minutes, or until golden brown and crisp.
