  • 675g McDougalls Vegetable Suet Mix
  • 100g Caster Sugar
  • 425ml Water / Milk
  • 175g Currants
  • 1Q Lemon - grated rind
  • 1000ml Bird's RTU custard


  1. Place the suet mix, sugar, currants and lemon rind in a bowl fitted with a beater blend in the water or milk on a slow speed until a soft dough forms. Do not over mix
  2. Transfer to a lined and greased pudding sleeve or individual dish and steam for 1 - 1½ hours
  3. Serve with Bird's RTU custard
