McDougalls Luxury Carrot cake

Ingredients

  • 545g Plain Multi mix
  • 193g whole egg
  • 161g oil
  • 107g water
  • 75g halved walnuts
  • 200g grated carrots
  • 2 ½ tsp cinnamon
  • ½ tsp mixed spice
  • 75g sultanas

Method

  1. Place the McDougall’s Plain Multi-Use Muffin & Cake Mix and spices into a mixing bowl. Select the whisk attachment.
  2. Place the Multi mix and spices into the mixing bowl first.
  3. Add oil, water and egg in a single liquid addition on SLOW speed over 1 minute; scrape down. Mix for 4 minutes on MEDIUM speed.
  4. Finally mix on SLOW speed for 1 minute, whilst adding the carrots, walnuts and sultanas.
  5. Scale off as desired loaf tin, ideally lined with greaseproof case.
  6. Bake in a preheated oven at 185°C/360°F/Gas Mark 4.5 for 30 – 35 minutes minutes. (Oven temperatures are for guidelines only as appliances may vary).

McDougalls Luxury Fruit cake

Ingredients

  • 545g McDougalls luxury plain & multi use cake and muffin mix
  • 193g whole egg
  • 161g oil
  • 107g water
  • 20g black treacle
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 50g of glace cherries
  • 75g sultanas
  • 100g currants
  • 50g of sliced almonds

Method

  1. Place the McDougall’s Plain Multi-Use Muffin & Cake Mix, spices and treacle into a mixing bowl. Select the whisk attachment.
  2. Add oil, water and egg in a single liquid addition on slow speed over 1 minute; scrape down. Mix for 4 minutes on medium speed.
  3. Finally mix for 1 minute on medium speed, whilst adding the fruit.
  4. Scale off in a round 9” cake tin, ideally lined with greaseproof paper.
  5. Sprinkle the almonds on top of the cake batter.
  6. Bake in a preheated oven at 180°C for 50 - 60 minutes minutes, or until a skewer comes cleanly from the batter. (Oven temperatures are for guidelines only as appliances may vary).

McDougalls Luxury Banana and Pecan Loaf cake

Ingredients

  • 500g multi mix
  • 180g whole egg
  • 150g oil
  • 100g water
  • 100g bananas
  • 50g chopped pecans

 

Method

  1. Place the McDougall’s Plain Multi-Use Muffin & Cake Mix into a mixing bowl. Select the whisk attachment.
  2. Add oil, water and egg in a single liquid addition on SLOW speed for 1 minute; scrape down. Mix for 4 minutes on MEDIUM speed.
  3. Finally add mashed up bananas and pecan nuts and mix on SLOW speed for 1 minute.
  4. Scale off in a suitable loaf tin (approx 540g)
  5. Bake in a preheated oven at 185°C/360°F/Gas Mark 4.5 for approx 50 minutes. (Oven temperatures are for guidelines only as appliances may vary).
  6. Allow to completely cool before slicing each loaf into approx 9 x 60g portions

 

Tips

Perhaps top with a little toffee sauce

Apricot and Orange Scones

Ingredients

  • 450g McDougalls Scone Mix
  • 50g Apricots chopped
  • 75ml Fresh Orange Juice
  • 100ml Water

Method

  1. Place the McDougalls Scone Mix in a bowl with the apricots. Using a dough hook blend in the water and orange juice until a soft dough is formed. Do not overmix.
  2. Knead on a lightly floured surface until smooth and then roll to 13mm (1/2) thickness and cut into rounds using a 5cm (2) cutter.
  3. Place the scones onto a greased baking tray and leave to rest for 15 minutes.
  4. Brush with beaten egg and bake at 220C/425F/Gas Mark 7 for 10 minutes or until golden brown. For fan assisted ovens bake at 200C/400F/Gas Mark 6

Cherry and Coconut Rock Cakes

Ingredients

  • 450g McDougalls Scone Mix
  • 100g Desiccated Coconut
  • 225ml Cold Water
  • 100g Cherries chopped
  • 50g Granulated Sugar

Method

  1. Place the McDougalls Scone Mix, cherries , coconut and sugar into a bowl fitted with a beater or dough hook. Gradually blend in the water and mix on a slow speeed until a soft dough is formed. Do not overmix.
  2. Spoon 10 mounds of the mixture onto a greased baking tray and sprinkle with the coconut
  3. Leave to stand for 15 minutes.
  4. Bake at 200C/400F/Gas Mark 6 for 15 minutes or until golden brown and cooked. For fan assisted ovens bake at 190C/375F/Gas Mark 5

Coconut and Mango Scones

Ingredients

  • 450g McDougalls Scone Mix
  • 50g Desiccated Coconut
  • 200ml Cold Water
  • 100g Dried Mango chopped

Method

  1. Place the McDougalls Scone Mix, coconut and mango into a bowl fitted with a beater or dough hook. Add the water and mix on a slow speed until a soft dough is formed. Do not overmix.
  2. Roll out to 5mm (1/2) thick and cut into rounds with a 3-4 cutter.
  3. Brush with milk or beaten egg and leave to stand for 15 minutes.
  4. Bake at 220C/425F/Gas Mark 7 for 10 minutes or until golden brown and cooked. For fan assisted ovens bake at 200C/400F/Gas Mark 6

Plum & Apple Crumble

Ingredients

  • 400g McDougalls Flapjack Mix
  • 4Q tbsp Water,
  • 1000g Plums stoned and chopped
  • 1000g Apples cored & chopped
  • 50g Sugar (optional)
  • 100g Cornflakes lightly crushed

Method

  1. Place the plums, apple & sugar (if using) in a saucepan with water, cover and cook until soft.
  2. Place the cooked fruit in a deep greased lined 25cm x 35cm (10 x 14) tin.
  3. Mix McDougalls Flapjack mix with cornflakes, then scatter over fruit.
  4. Bake in a pre-heated oven at 200C/400F/Gas Mark 6 for 25-30 minutes until crumble is crisp and golden. For fan-assisted ovens, reduce temperature to 190C/375F/Gas Mark 5

Tips

Delicious served with Bird's custard.

Fruity Flapjack Bars

Ingredients

  • 1500g McDougalls Flapjack Mix
  • 150ml Cold water
  • 100g Fruits of the Forest Compote

Method

  1. Place the McDougalls Flapjack Mix into a bowl fitted with a beater.
  2. Add the cold water and mix on a slow speed for 15 seconds.
  3. Press half of the mixture into a greased 25cm x 35cm (10 x 14) tin. Top with the Fruits of the Forest Compote and spread the remaining flapjack mixture over the top.
  4. Bake in a preheated oven 180C/350F/ Gas mark 4 for 25 - 30 minutes until golden around the edges.
  5. When still warm mark portions but leave in tin until cool.

Tips

Any flavoured compote can be used

Apple and Cinnamon Scone

Ingredients

  • 1000g McDougalls Scone mix
  • 200ml Apple(peeled and grated)
  • 2tsp Ground Cinnamon
  • 400ml Cold water
  • 1 Egg (egg wash)
  • 75ml Milk (egg wash)

Method

  1. Place the McDougalls Scone mix into a mixing bowl fitted with a beater add the grated apple, cinnamon and water and blend in on SLOW speed until a soft dough is formed.
  2. Roll out the dough on a lightly floured surface to 15ml(1/2) thickness, cut into rounds using a 7cm(3) cutter.
  3. Place on a lightly greased, flat baking tray and brush with egg wash. Bake at 200c/425f/Gasmark 7 for 10-15 minutes.When the scones are cooked remove onto a cooling wire immediately.

Tips

Do not over mix the dough on the mixer as this will result in heavy scones.
